When you find yourself salty, sunburned and tired, you're in need of two things. The first, a margarita as soon as possible. The other is something to eat.

Nothing quite pairs with citrus and tequila like the fish you were just swimming with. This recipe is so easy that the forthcoming buzz won't even impair you. 

INGREDIENTS

  • 1/2 lb of white fish (our favorite is Halibut) - cubed
  • 1/2 cup of squeezed Lime Juice
  • 1 Radish - diced
  • 1/2 Jalapeno - minced
  • 1 Mango - cubed
  • 1/2 Avocado - sliced
  • Handful of Cilantro - chopped
  • Salt to taste

RECIPE

Add the fish and lime juice to a mixing bowl and stir until well saturated, let the fish marinate for at least 15 minutes in the refrigerator. After the fish is marinated strain the lime juice from the bowl. Combine all ingredients in no particular order and stir gently until well mixed. Garnish with fresh cilantro and avocado. Sat to taste, eat with chips or warmed flour tortillas, and wash it down with the aforementioned margarita.
